Who Dat? King Cake Kolaches Are Back

Mardi Gras enthusiasts, get excited. King cake kolaches are back at Republic Kolache, and they are delicious. The sweet treats are the result of a delicious collaboration with New Orleans Native and Bayou Bakery owner David Guas.
Republic Kolache at Hill CountryRepublic Kolache is currently popping up at Hill Country BBQ on weekends, a fitting collaboration for the “national pastry of Texas.” I used to love stopping by their stand at Union Market, but the Hill Country set up is even better with ample seating and fresh coffee on order.

Republic Kolache menuI’m a huge fan of the savory varieties, but our mission for this trip was focused on the colorful king cake kolaches. The Republic Kolache pop-up is only open Friday through Sunday from 8 a.m. to 11 a.m. and the king cakes have been known to sell out fast. Luckily, you can order ahead to be sure to get your hands on them. We showed up a little after 10 a.m. on a Saturday and our order was ready and waiting – super easy. This also seemed like a good time to pop in, the crowds were a lot lighter than I’d expected.
king cake kolachesWe went with a half-dozen king cake kolaches, two of which we immediately shoveled into our mouths. These will definitely satisfy your sweet tooth, with a decadent cream cheese topping and almond icing. They taste like a cross between a cheese Danish and a King’s Hawaiian roll – in the best way possible – and the colorful glitter is just plain fun. This is as close as I’ll get to Mardi Gras this year, and I’m totally okay with that. We rationed the rest to enjoy at home over the next couple of days.

Don’t forget to watch out for the babies, each one is redeemable for a free kolache on your next visit. (We got overeager with our packing last weekend and accidentally tossed ours. I’ve lost sleep over it. True story.)
