Allow me to go a little Oprah on you as I say, I LOVE CHEESE. A lot. Rarely does a day go by that I don’t crave something cheesy – grilled cheese sandwiches, Caprese salads, french onion soup, mac-n-cheese, cheeseburgers, gooey omelets, pizza – you name it, I love it. So when Cabot Creamery offered to send me a box of cheese, you can bet I didn’t have to think twice about accepting.
You’re probably familiar with Cabot’s delicious cheeses, but you might not know that Cabot is owned by 1,100 farm families throughout New York and New England. I was pumped to receive a huge goodie box of their specialty cheddar, a beautiful cookbook with tons of tantalizing recipes, along with a wine opener and cheese knife.
Cooking with Cabot
We couldn’t wait to get cooking, and have already whipped up two winning recipes. First, inspired by the Embassy Chef Challenge we decided to make these delicious yet crazy easy North African Smoky Eggs. This dish made for a wonderful weekend brunch at home.
We’re clearly big fans of cheesy eggs. Our next foray into cooking with Cabot was an amazing Vegetable and Cheddar Strata recipe.
We loved how many veggies were packed into this delicious recipe. We’ve been enjoying the leftovers throughout the week for a quick, easy, protein-packed breakfast.
I’m really looking forward to making my way through the rest of the cookbook. But I won’t lie, there have also been a few late-night grilled cheese sandwiches as well. How could we not? And we will certainly be slicing up some Cabot cheddar with meat and crusty bread when entertaining. Not a single gram of this cheese will be wasted. Trust.
