Brunch at Home: BBQ Omelets & Bloody Marys

Looking for the perfect brunch to make at home over Halloween weekend? I have a few ideas.
We’ve been brunching at home a lot these days to cut back on spending and pants’ expansion. But staying in doesn’t have to be boring.
homemade brunchWe spiced up last weekend’s brunch with homemade bloody Marys, using reduced sodium tomato juice. For me, the key to a good bloody Mary is a LOT of Frank’s Red Hot Sauce, a healthy dose of Worcestershire, a pinch of celery salt and several generous cranks of black pepper.
homemade bloody marySo delicious you don’t even need the vodka, but a splash of Tito’s will make it all the more festive.
For the main event, we replicated the amazing bbq omelets we had in Urbanna a few weeks ago.
bbq pulled pork omeletThe pork came from leftovers of this Skinny Mom recipe I made a few days prior, only using Bone Suckin’ Sauce instead of Stubb’s, because it’s my favorite.
Tom is the resident omelet maker of our household. Mine always turn into scrambled eggs, which probably still would have been delicious.
I mixed up the Marys while he manned the stove, for a lazy weekend brunch that came together super quick.
He used three eggs per omelet, stuffed with a very generous helping of the leftover pork and topped with shredded sharp cheddar cheese. We doused the omelets with the bbq sauces we bought in Urbanna and were stuffed for the rest of the afternoon.
While I do sometimes miss having someone else do the dishes, these weekend brunches at home are turning into one of the highlights of my week.
My other favorite at-home brunch options are eggs in purgatory with crusty baguettes and baked french toast. I’ll be trying this recipe for apple cinnamon French toast casserole this weekend, which might call for some spiked apple cider.

    I adore bloody marys, even without the vodka! I’ve begun ordering virgin marys on airplanes whenever they come by with the drinks cart (they always have the mix on hand).

    Both V and I enjoy a good Bloody Mary, so we may have to try our hand at making them at home!
    And you know, as much as I love eating out and trying new restaurants, a good home cooked meal can’t be beat!
